Definitions :
- Allergy: Dysregulation of the immune system that corresponds to a loss of tolerance to substances that are at first sight harmless: allergens.
- Anaphylaxis: Systemic hypersensitivity reaction, generalized, severe, and potentially life-threatening. It occurs after a few minutes to a few hours following exposure to a triggering factor.

- World: 4th chronic disease
- Europe: ➚ Prevalence: 0.3%. incidence between 1.5 and 7.9 per 100 000 per year
- France: Allergovigilance network – 2002-2017: 1890 severe cases including 16 deaths
- Cayenne: Year 2020 – 216 ED consultations (allergy and allergic/anaphylactic shock)
